Recipe: Creamy pumpkin soup with mushrooms
1 kg pumpkin( seedless, with peel)
3 small onions, diced
250 g cremini mushrooms, sliced
3 carrots, grated
1 liter of water
3 tbsp olive oil
Parmesan cheese, pumpkin seeds
Salt, pepper, spices.
Boil pumpkin cubes in 1 liter of water for about 20 minutes. Season with salt, pepper, spices. Remove from heat
Fry onions in a pan with oil until lightly browned
Add mushrooms and cook until the water has been steamed away .Season with salt and pepper.
4.Using a stick blender, blend pumpkin until smooth. Heat a little but do not boil. Add fresh grated carrots, mix. Soup is ready. Place in the plates, add the mushrooms, season with parmesan cheese and pumpkin seeds.
