Recipe: Fried Polenta Slices with Cremini Mushrooms

Recipe ingredients:

– 80 g Polenta
– 350 ml water
– 1 medium size onion, diced
– 100 g cremini mushrooms, cleaned and sliced
– 2 tomatoes
– 100 g of fresh cheese
– Garden herbs (parsley, dill, basil, thyme, oregano..)
– 4 tablespoons olive oil
– Salt

Preparation:

Bring water and salt to a boil in a pan, pour polenta slowly into boiling water, whisking constantly until all polenta is stirred in and there are no lumps. (Cook 25-30min)

In a hot pan with oil fry the onions, then add mushrooms. Bake for 5 more minutes. When it’s cooled down a little bit, add the chopped garden herbs. Shake the polenta in a pan with fried onions and mushrooms and mix everything well.

Squeeze the whole mixture on one side of the pan and leave to cool and firm up.

Cut the Polenta into strips. Bake Polenta strips in hot pan with 2 tablespoons of oil on all sides until lightly browned. 

Serve with garden salads, sliced tomatoes and fresh cheese.
