Recipe: Vegetarian Pumpkin Lasagna

Lazanija su moliūgu

Ingredients for vegetarian lasagna

– 300g pumpkin
– 3 onions, diced
– 300g of cremini mushrooms, cleaned and sliced
– 500g minced turkey
– 6 sheets of lasagna
– 1 pack mozzarella
– 200g grated cheese
– 500ml tomato juice
– 3 tablespoons Oil
– Salt, ground pepper

Ingredients for white sauce

– 80g butter
– 80g flour
– 800ml milk
– 50g grated parmesan
– Grated nutmeg
– Salt, ground pepper

White sauce preparation:

Melt butter in saucepan, then add plain flour. Stir continuously until a paste forms .Add the milk to the gradually, stirring as you go, until you get a smooth souce. Season with grated nutmeg, salt, pepper and add parmesan. Stirring constantly, until the sauce thickens.

Vegetarian lasagna preparation:

Heat the oil in the pan, fry onions, then add the mushrooms and bake all for 10 minutes.

Add the minced turkey meat and bake for about 10 minutes. Season with salt and pepper.

Stop baking, add in pan unpeeled diced pumpkin, mix fine all.

Spread 1/3 pumpkin souce in an lasagne baking dish coated with cooking spray. Add 1/3 white souce.

Top with 3 noodles. Repeat layers.

Top with remaining pumpkin souce and white sauce. Add tomato juice.

Bake in oven at 200C for 50 minutes.Then add grated cheese and sliced mozzarella on top. Bake until the cheese melts.
